Thousand Apologies started the way many good things do — in a kitchen with an escalating collection of bottles and a growing suspicion that hot sauce could be a lot better.

Founder Rita Kanji has always loved to cook, feed people, and chase flavour down strange little rabbit holes. One batch became another, friends started asking for more, and soon the sauces people kept reaching for at the table had quietly turned into a brand.
